ROUNDTABLE DISCUSSION FOR HOSPITALITY INDUSTRY PROFESSIONALS

Sustainability and sustainable practices are increasingly becoming important across all business segments; it is not only impacting the bottom line but is also significantly impacting environmental, social, and economic aspects in general. Like other businesses, the hospitality industry also consumes natural resources significantly, numerous researches suggest that the hospitality industry is one of the biggest employers in the world and it contributes significantly to the GDP. A segment of the business that has multiple impacts on the environment and provides significant employability needs special attention, therefore, it is important to understand the best sustainable practices adopted by the hospitality industry.

Hospitality graduates are the future of the industry, they would take leadership and decision-making roles in the future, so, it becomes even more important and relevant for the industry to nurture the future leaders as per the latest industry trends and future demands.

Themes for the roundtable discussion

  1. Sustainable practices in the hospitality industry in India
  2. Hospitality education for a sustainable future; Can hospitality education support sustainability?

Theme 1: The discussion would look into the best sustainable practices that the industry has adopted and their significance in India/Asian market.

Theme 2: The discussion would look at how hospitality education can contribute to a better sustainable future in terms of economic, social, and environmental sustainability.

 

Format of Discussion

This session would be in the form of a Roundtable Discussion. The participants will be given an opportunity to present their views on select issues, followed by open discussion. Inputs would be documented. In addition, a questionnaire would be used for seeking more specific feedback and responses. The workshop evaluation generated will be shared with all participants.
 

Partnering with Industry 

Industry is a key stakeholder for an educational institute. The role that it plays is critical in the success and learning of students. This session would add to the existing knowledge base and share the same with the student community, allowing them to remain connected with trends and changes that are going to impact the hospitality sector.

 
Research & Academic Value

The findings that emerge from the discussion will allow our faculty to pursue extensive research that can be published and shared with a larger group of stakeholders including the students and industry professionals. The discussion is likely to provide guidance to our ongoing ‘Farm to Fork’ initiative and how the same can be linked with ‘Slow Food” and ‘Farm to Fork’ concepts, and further our goal to be an institution that is focused on expanding its sustainability footprint.

Sustainability Initiatives at Vedatya

Vedatya Institute conducts applied research in the area of ‘Slow Food’ and ‘Sustainable Practices’ in the culinary domain. The Farming, Dairy, and Fish Pond initiative is guided by a larger objective to develop a model wherein the Institute is able to produce an assortment of herbs, vegetables, fruits, and staple grains to support its internal requirement, thereby minimizing the need to depend on external sources. Student-led activities and competitions utilize the farm output in recipes with traditional connections that are featured on menus served on campus. This initiative involves all stakeholders- students, staff, the local village community, and our industry partners.

It is a path-breaking initiative that is today allowing our hospitality students to engage with the entire culinary value chain and learn concepts like ‘Farm to Fork ’ and enhance their culinary skills through an applied orientation.
